Responsibilities
Even though kitchen employees may not come into direct contact with guests, their responsibilities are key to the Cafe’s success. At Hard Rock, cooks will be considered all-around culinary employees.

<li>Making prep recipes and menu products to spec</li>
<li>Properly labeling, dating, covering and refrigerating prepped items for the line</li>
<li>Performing opening, closing &amp; side duties – setting up, stocking, and breaking down all kitchen equipment and prep, and line stations</li>
<li>Maintaining a clean and organized kitchen, and line</li>
<li>Practicing safety and sanitation standards</li>
<li>Having a sense of urgency</li>
<li>Properly reading items printed on order tickets or automated Kitchen Display System</li>
<li>Assembling orders - double checking product quality and specs</li>
<li>Demonstrating impeccable product knowledge</li>
<li>Involved in handling all re-cook, special prep, long ticket, large party/voucher group procedures</li>
<li>Communicating professionally with co-workers and Front-of-the-House staff</li>
<li>With competitive pay wage of up to $15+/hr.</li>

Qualifications
EXPERIENCE, EDUCATION, &amp; CERTIFICATIONS

<li>In some U.S. States, a food safety certification program is required to be completed before being able to serve food or alcohol, which may include a food handlers card (i.e., California law requires this)</li>

<ul>
<li>Prepares and cooks food following the Brands specifications in a timely manner while maintaining the safety, sanitation, and security of the kitchen and equipment. Works in assigned restaurant location as determined by management.</li>
</ul>
 Responsibilities: &nbsp;&nbsp; &nbsp;
<ul>
<li>Prepares ingredients for cooking, including portioning, washing, chopping, and storing according to MCA and Brand specifications and restaurant directions</li>
<li>Demonstrates product standards and recipe knowledge daily</li>
<li>Cook food according to predetermined MCA and Brand specifications and quantities</li>
<li>Check and ensure the correctness of the temperatures of appliances and food and maintain required logs</li>
<li>Notify a manager if a product does not meet the specifications</li>
<li>Communicates any product runouts, equipment issues, and quality and service issues to the MOD and chef immediately </li>
<li>Set up, maintain, and/or close station for scheduled shift (checks and/or breaks down and cleans equipment, preps all appropriate food items and small wares, dates food items and stores according to FIFO rotation method, etc.)</li>
<li>Prepares and plates food items according to specifications and preset time limits</li>
<li>Serve food in proper portions onto proper receptacles; ensure proper arrangement and garnish</li>
<li>Aid in moving and installation of beer, wine, and cocktail kegs</li>
<li>Complete safety training and certifications</li>
<li>Follows all company safety, sanitation, and security policies and procedures</li>
<li>Properly uses personal protective equipment</li>
<li>Report maintenance needs, accidents, injuries, and unsafe working conditions to a MOD immediately</li>
<li>Maintain confidentiality of proprietary information</li>
<li>Maintain and care for company equipment according to instructions and manufacturer requirements</li>
<li>Filters and boils out fryers according to Brand specifications </li>
<li>Welcome and acknowledge guests according to company standards, when applicable, and assist guests as needed</li>
<li>Communicate with others using clear, respectful, and professional language</li>
<li>Communicate any assistance needed during busy periods to the Chef to ensure optimum services</li>
<li>Responds to all "callbacks" and "echoes" to ensure ordered food is prepared on time</li>
<li>Develop and maintain positive working relationships with others and work toward the goal of customer satisfaction</li>
<li>Ensure adherence to quality expectations and standards</li>
<li>Discards and tracks all expired products and mistakes on approved waste sheet</li>
<li>Clean, sanitize, and organize all kitchen areas, walk-in coolers, reach-ins, and all storage areas according to MCA and Brand specifications</li>
<li>Disposes of grease per MCA and Airport policy</li>
<li>Assists other crewmembers as needed; is aware of and alerts other crewmembers of customer’s needs</li>
<li>Maintains knowledge of airport, terminal, and restaurants; offers information, recommendations, MCA and Brand history, etc.</li>
<li>Maintains a clean, neat, well-groomed appearance and adheres to all uniform and appearance guidelines</li>
<li>Sweeps and mops as needed</li>
<li>Performs additional responsibilities, although not detailed, as requested by the Culinary Manager or MOD at any time</li>

 Qualifications &nbsp;
<ul>
<li>Demonstrated pleasant attitude and energy</li>
<li>Professional demeanor, appearance, and communication skills in accordance with restaurant guidelines</li>
<li>Demonstrated knowledge of professional cooking and knife-handling skills</li>
<li>Two years of cooking experience in a similar concept or restaurant</li>
<li>Demonstrated ability to execute restaurant menu in absence of the MOD</li>
<li>Demonstrated knowledge of, and certification within 90 days for all required local, state, and federal health, safety and sanitation laws</li>
<li>Understanding of proper use and maintenance of major kitchen equipment including stoves, refrigeration, slicer, dish machine, etc.</li>
<li>Ability to take direction and work in a team environment</li>
<li>Ability to multi-task and work calmly and effectively under pressure in a fast-paced environment</li>
<li>Problem-solving and organizational skills</li>
<li>Adherence to MCA and Airport Knife Handling Policy</li>
<li>Ability to stand and exert fast-paced mobility for an entire shift</li>
<li>Ability to transport up to 50 pounds on occasion and up to 35 pounds regularly</li>
<li>Effective and professional oral communication skills</li>
<li>Demonstrated ability to learn food and beverage knowledge and participate in training as required</li>
<li>Ability to read menu offerings, work procedures, recipes, food orders, KDS, safety procedures, and operating directions </li>
<li>Ability to maintain a safe and clean restaurant for customers</li>
<li>Knowledge and adherence to MCA policies and procedures</li>
</ul>
