Mixologist

Position Summary:

The Mixologist is the curator of the bar experience at Palm House, responsible for delivering an exceptional and memorable beverage program that embodies sophistication, creativity, and precision. This role requires an expert-level professional who possesses extensive knowledge of spirits, cocktail techniques, flavor profiles, and luxury service standards.

The Mixologist will craft signature cocktails inspired by the Palm House’s Japanese-Peruvian culinary style while upholding Forbes Five-Star service expectations. The ideal candidate is a storyteller through drinks — balancing art, science, and hospitality to create a refined yet inviting experience for our guests.

Key Responsibilities:

  • Curate, design, and execute a premium cocktail and beverage menu that reflects Palm House’s identity and culinary direction.
  • Maintain expert knowledge of all spirits, wines, beers, and non-alcoholic options offered at the property.
  • Consistently deliver impeccable, engaging, and anticipatory guest service following Forbes and luxury hospitality standards.
  • Demonstrate mastery of mixology techniques including infusions, fat-washing, smoking, carbonation, clarification, and advanced garnishing.
  • Work closely with the culinary team to design food and beverage pairings that enhance the overall guest experience.
  • Oversee all bar mise en place, ensuring ingredients, glassware, and garnishes meet the highest presentation standards.
  • Train and mentor bar staff to elevate service, cocktail preparation, and guest engagement.
  • Maintain full knowledge of hotel promotions, events, and special offerings to make appropriate recommendations.
  • Ensure compliance with all beverage handling procedures, alcohol laws, and sanitation standards.
  • Manage bar inventory, ordering, and cost controls in coordination with the Purchasing and Finance teams.
  • Contribute to seasonal and thematic beverage development in collaboration with the Food & Beverage leadership.
  • Represent Palm House brand values through professionalism, creativity, and a passion for excellence.

Qualifications:

  • Minimum 3–5 years of mixology or lead bartender experience in a luxury or Forbes-rated property, fine dining establishment, or high-end cocktail bar.
  • Certified mixologist or completion of recognized bar or beverage programs preferred.
  • Proven expertise in classic and contemporary cocktail creation, spirit knowledge, and beverage trends.
  • Strong palate and understanding of balance, aroma, and presentation in cocktail design.
  • Exceptional guest service and communication skills with a focus on emotional intelligence and attentiveness.
  • Ability to lead by example, inspire creativity, and foster a culture of excellence.
  • Must have Food Handler and Alcohol Service certifications as required by local law.

Physical Requirements:

  • Must be able to stand and move for extended periods (up to 8–10 hours).
  • Ability to lift and carry up to 40 lbs.
  • Frequent bending, reaching, and repetitive motions required during service.
  • Must be able to work flexible hours, including evenings, weekends, and holidays.
