Fiddler’s Creek Club and Spa, an upscale private club known for exceptional dining and member-focused hospitality, is seeking a highly skilled and creative Pastry Chef to lead our pastry operations. This role is responsible for designing, producing, and overseeing all desserts, baked goods, and specialty pastry items for à la carte dining, tasting menus, banquets, special events. The ideal candidate is both an artist and a leader—an expert technician with a passion for quality, presentation, and creativity.
Key Responsibilities
- Develop and execute high-quality dessert menus for daily service, holiday events, banquets, and special functions.
- Create visually stunning, well-balanced pastries, breads, chocolates, and plated desserts aligned with the club’s upscale standards.
- Manage all pastry production, ensuring consistency, flavor excellence, and impeccable presentation.
- Lead, train, and mentor pastry team members; provide guidance on techniques, recipes, and kitchen professionalism.
- Oversee pastry inventory, ordering, and cost control to meet budgetary goals without sacrificing quality.
- Ensure all pastry kitchen areas maintain the highest standards of cleanliness, food safety, and sanitation.
- Collaborate with the Executive Chef and culinary leadership on menu development, tastings, and seasonal updates.
- Execution of ala carte dinner service plating.
- Stay current on pastry trends, techniques, and industry best practices, integrating fresh ideas into the club’s culinary program.
- Prepare specialty items for member events, weddings, and high-profile occasions requiring custom pastry work.
- Maintain accurate recipe documentation and production schedules.
Qualifications
- Formal culinary or pastry arts education preferred
- Minimum 4–5 years professional pastry experience in a fine-dining, luxury hotel, resort, restaurant or private club environment.
- Demonstrated mastery of pastry and baking techniques, including plated desserts, sugar artistry, chocolate work, ice creams, laminated doughs and artisan breads.
- Strong leadership and communication skills with the ability to train and inspire a team.
- Exceptional attention to detail, creativity, and a commitment to excellence.
- Ability to manage and execute simultaneous events and ala carte service needs.
- Knowledge of food cost management, ordering systems, and inventory control.
- ServSafe or equivalent food safety certification required.
Physical Requirements
- Ability to stand for extended periods and work in a fast-paced, high-heat environment.
- Must be able to lift up to 40 pounds.
- Flexible schedule including early mornings, evenings, weekends, holidays, and special events.
