Sous Chef
Summary: Works directly with and in the absence of the Executive Chef to maintain and improve the culinary operation. Supervises and coordinates activities of the Cooks and other kitchen staff by performing the following duties.
Essential Duties and Responsibilities include the following. Other duties may be assigned.
- Assists the Executive Chef in monitoring the kitchen activities and services.
- Supervises and trains kitchen staff, establishes schedules, coaches and evaluates the kitchen staff’s performance.
- Creates menus and ensures proper execution.
- Prepares food served following recipes and special diet or allergy restrictions
- Directs and instructs the culinary team in preparing, portioning, and garnishing food to ensure that methods of cooking and garnishing and sizes of portions are as prescribed.
- Trains kitchen personnel in sanitation practices and establishes cleaning schedules, stock rotation schedules, refrigeration temperature control points, and other sanitary controls.
- Prepares reports, costs menus and performs other administrative duties assigned by the Executive Chef.
- Expedites food orders.
- Inspects and enforces sanitation standards for the kitchen.
- Makes recommendations for maintenance, repair and upkeep of the kitchen and equipment.
- Adheres to all Club policies and procedures.
Supervisory Responsibilities: Directly supervises fifteen employees in the kitchen. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include supervising and training employees; planning, assigning, and directing work; disciplining employees; and addressing complaints and resolving problems.

Education and/or Experience: Associate's degree (A. A.) or equivalent from two-year college or technical/culinary school; or two to four years related experience and/or training; or equivalent combination of education and experience.
Language Skills: Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization.
Mathematical Skills: Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume. Ability to apply concepts of basic algebra and geometry.
Reasoning Ability: Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.
Computer Skills: To perform this job successfully, an individual should have knowledge of Point of Service systems; Spreadsheet software and Word Processing software.
