The Role
You’ll lead the kitchen, oversee a 155 seat restaurant, and ensure every dish upholds our reputation for authentic Italian cuisine. Protect signature classics, evolve the menu with seasonal touches, and maintain the warmth that keeps guests returning.
What You’ll Do Every Day
- Guard the Flame: Taste every sauce, adjust seasoning, and expedite up to 200 covers on peak nights with composure.
- Menu Maestro: Refresh 25% of the specials board weekly; source premium Italian imports and local ingredients.
- People First: Mentor two sous chefs, lead daily line-up and family meal, and develop prep cooks into future leaders.
- Numbers Ninja: Maintain food cost at 27–29%, labor under 24%, and minimize waste.
- Ambassador: Greet tables, pair wines, and host occasional winemaker dinners.
What You Bring
- 10+ years crafting Italian cuisine; at least 3 as Head Chef or CDC in a 150+ cover independent restaurant.
- Expertise across Italian regional styles (Roman, Neapolitan, Northern, Southern).
- ServSafe Manager and allergen-certified; calm under pressure.
- Fluent English; conversational spanish preferred.
