Opening this October at 6001 Central Avenue in St. Petersburg, FL, Mercado West is the second location of Red Mesa Mercado. This Cali-Mex sit-down, fast-casual spot brings a fresh twist to modern Mexican street food. Guests will enjoy tacos, burritos, bowls, and margaritas in both indoor and outdoor settings. With its quick service and not-your-basic approach to tacos and burritos, Mercado West is set to become the go-to destination for casual dining, takeout, and cocktails.


Job Summary

Be part of the opening team at Mercado West! We are seeking reliable, skilled, and energetic Line Cooks to help launch our newest location. As a Line Cook, youll be a key player in delivering fresh, flavorful dishes that showcase our Cali-Mex style. This is an exciting opportunity to join a brand-new restaurant, help build the kitchen culture from day one, and ensure every plate reflects the quality and creativity our guests expect.


Key Responsibilities

  • Prepare and cook menu items following standardized recipes and portion controls.
  • Set up and stock stations with all necessary supplies before and during service.
  • Ensure food quality, freshness, and presentation meet Mercado West standards.
  • Assist with prep work including chopping vegetables, grilling meats, and preparing sauces.
  • Maintain cleanliness and organization of workstations, equipment, and storage areas.
  • Follow proper food handling and sanitation procedures in compliance with health codes.
  • Communicate with team members and adapt quickly in a fast-paced environment.
  • Uphold all restaurant policies, procedures, and safety standards.


Qualifications

  • Previous experience as a Line Cook in a fast-casual or full-service kitchen.
  • Knowledge of various cooking methods, ingredients, and equipment.
  • Ability to work efficiently in a high-volume, fast-paced environment.
  • Strong teamwork, communication, and multitasking skills.
  • Understanding of food safety and sanitation regulations.
  • Ability to stand for long periods and lift up to 50 lbs.
  • Flexibility to work nights, weekends, and holidays as needed.
