Line Cook

Summary Prepares, seasons, and cooks soups, meats, vegetables and other foodstuffs for consumption in eating establishments by performing the following duties.

Essential Duties and Responsibilities include the following. Other duties may be assigned.

  • Follows all Club food handling safety and sanitation policies and procedural training.
  • Maintains clean and sanitary food preparation and storage areas at all times.
  • Prepares menu items according to Club’s recipe manual and plate presentation.
  • Attends daily pre-shift meeting and reviews specials &/or menu changes.
  • Adjusts thermostat controls to regulate temperature of ovens, broilers, grills, roasters, and steam kettles.
  • Measures and mixes ingredients according to recipe to prepare soups, salads, gravies, desserts, sauces, and casseroles.
  • Bakes, roasts, broils, and steams meats, fish, vegetables, and other foods.
  • Adds seasoning to foods during mixing or cooking.
  • Observes and tests foods being cooked by tasting, smelling, and piercing with fork to determine that it is cooked.
  • Carves meats, portions food on serving plates, adds gravies and sauces, and garnishes servings to fill orders.
  • Washes, peels, cuts, and shreds vegetables and fruits to prepare them for use.
  • Butchers chickens, fish, and shellfish.
  • Cuts, trims, and bones meat prior to cooking.

Breaks down and cleans work station at the end of service and adheres to cleaning schedules as assigned.

Qualifications To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. Education and/or Experience: Associate's degree (A. A.) or equivalent from two-year college or technical/culinary school; or six months to one year related experience and/or training; or equivalent combination of education and experience.

Language Skills: Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to write simple correspondence. Ability to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization.

Mathematical Skills: Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.

Reasoning Ability: Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.

Other Skills and Abilities: Ability to visually inspect food; andread and follow recipes.

While performing the duties of this job, the employee is frequently required to stand; walk; talk or hear and taste or smell. The employee must frequently lift and/or move up to 25 pounds and occasionally lift up to 50 pounds. Specific vision abilities required by this job include close vision, color vision and depth perception.
