JOB OVERVIEW::

Assist with supervising all aspects of F&B outlets, with a primary focus on In-Room Dining and Café operations, in accordance with hotel standards. Direct, implement and maintain a service and management philosophy which serves as a guide to respective staff. This role must strive to provide anticipatory service at all times. Practice social distancing, observe mask mandates and maintain hand washing routine as ordered by the CDC, Palm Beach County, and the State of Florida.

ESSENTIAL JOB FUNCTIONS:

  • Consistently provide friendly, engaging and anticipatory guest service and heartfelt hospitality.
  • Maintain complete knowledge of:
  • All liquor brands, beers and non-alcoholic selections available in F&B outlets.
  • Designated glassware and garnishes for drinks.
  • All garnishes and allergens
  • All menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices.
  • Daily menu specials, 86'd items.
  • Outlet layouts, table/seat/station numbers, proper table set-ups, room capacity, hours of operation, price range and dress code.
  • Daily house count, arrivals/departures, VIP's.
  • Scheduled in-house group activities, locations and times.
  • Correct maintenance and use of equipment.
  • All department policies/service procedures.
  • Assist F&B Managers with supervising staff on shift and ensure proper staffing levels. Coordinate activities of all Food & Beverage employees engaged in providing meals and/or beverages to guests.
  • Counsel, guide, train and instruct employees in the proper performance of their duties.
  • Assist Food & Beverage Management in implementing and administering established procedures.
  • Provide clerical and administrative support to the Food and Beverage Department.
  • Assist in preparing, adjusting and posting schedules weekly and as needed.
  • Check storage areas for proper supplies, organization and cleanliness. Rectify any cleanliness/organization efficiencies immediately.
  • Complete requisitions to replenish shortages or additional items needed for the anticipated business.
  • Assist with monthly food, liquor, beer, and wine inventory.
  • Meet with the Chef to review daily specials and 86'd items; update board throughout shift. Ensure that staff is aware of such.
  • Respond to guest requests in a timely, friendly and efficient manner.
  • Process payments in POS system and close out checks.
  • Responsible for coordinating in-room dining service with front- and back-of-house personnel to provide a guest experience that meets or exceeds guest expectations.
  • Assist with expediting food from the kitchen when necessary.
  • Maintain the highest level of standards of quality of products and service at all times.
  • Advise managers of any complaints as soon as they occur.
  • Maintain cleanliness or all Food & Beverage outlet areas. Maintain full knowledge of and comply with food safety and sanitation policies at all times.
  • Maintain high standards of personal appearance and personal hygiene.
  • Adhere to local and government compliance with health and safety regulations to ensure a clean and safe work environment for guests and employees.
  • Maintain knowledge of all safety and emergency procedures and is aware of accident prevention policies.
  • Follow outlet policies, procedures and service standards.
  • Notify Loss Prevention immediately of found items if guest has departed.
  • Maintain a professional courteous manner with all guests and fellow employees.
  • Maintain a safe and secure working environment.
  • Maintain confidentiality of guest, employee, and company information.
  • Assist with special and deep cleaning projects as assigned by a supervisor.
  • Perform any other duties as requested by manager.
  • Assist with performance reviews of employees.
  • Assist with monthly inventory of food & beverage and paper products within F&B outlets.

QUALIFICATIONS

  • High School or equivalent.
  • 2 years of Food & Beverage experience, minimum of 6 months experience in a Supervisor/Lead role in an upscale restaurant or luxury hotel/resort.
  • Previous server experience. Knowledge of various food service styles.
  • Excellent understanding of steps of service.
  • Excellent guest service skills and passion for hospitality.
  • Ability to satisfactory read, write, speak, understand, and communicate in English.
  • Ability to communicate professionally and respectfully with guests and co-workers.
  • Ability to provide legible communication.
  • Ability to compute basic mathematical calculations.
  • Familiarity with food and beverage cost controls.
  • Proficiency with restaurant POS systems, OpenTable, Outlook, Word and Excel programs.
  • Detail-oriented and thorough.
  • Strong interpersonal and problem-solving abilities.
  • Ability to prioritize and multitask.
  • Ability to perform consistent work to the hotel’s high standards.
  • Must be able to work weekends and holidays as needed.
  • Ability to maintain personal hygiene.
  • Ability to work quickly and efficiently.
  • Ability to focus attention on guest needs, remaining calm and courteous at all times.
  • College degree, preferably in Hospitality or Culinary Management.
  • Certification of previous training in liquor, wine and food service.

  • Ability to maintain hotel's luxury standards, policies and procedures with all F&B personnel.
  • Ability to promote positive relations with all guests and co-workers.
  • Ability to prioritize and organize work assignments; delegate work.
  • Ability to direct performance of restaurant staff and follow up with corrections where needed.
  • Ability to motivate staff and maintain a cohesive team.
  • Ability to effectively coach employees and assist with a full training cycle (assess needs, plan, develop, coordinate, monitor and evaluate).
  • Ability to work without direct supervision
  • Must have knowledge of Food and Beverage preparation and culinary techniques, health department rules and regulations, liquor laws and regulations.
  • Ability to work well under pressure.
  • Ability to work cohesively with other departments and co-workers as part of a team.
  • Ability to work in a high pace environment.


Physical Requirements:

  • Prolonged periods of standing, bending, and walking. Frequently pulling, pushing, and bending.
  • Exposure to outdoor environment factors.
  • Ability to use hands to finger, handle or feel, and reach and carry with hands and arms.
  • Able to grasp, lift and/or carry, push, pull, or otherwise, move goods weighing a maximum of 50 lbs. following appropriate safety procedures.
