Responsibilities
Under the direction of the Creative Culinary Director, candidate is responsible for the entire back of the house operation of our Italian Dining Restaurant. Motivates and directs staff in all aspects of performance and ensures they adhere to aforementioned standards.
Essential Job Functions:

<li>Work in conjunction with the Manager and direct the development and administration of controls for all phases of the restaurant in an economical and profitable manner while maintaining established standards.</li>
<li>Spearhead menu item changes based on product mix reviews and guest feedback and interaction.</li>
<li>Develop menu and specialty menus in conjunction with chef in an effort to remain on the cutting edge of industry trends and standards.</li>
<li>Ensure that the restaurant supports the casino by providing outstanding food offerings to VIP guests in the restaurant and during special events.</li>
<li>Institute cost control procedures, inventories and standards of performance. Review purchase orders and inventory levels as needed.</li>
<li>Proficient in the budgetary process in regards to analyzing data to forecast future fiscal results.</li>
<li>Provide project leadership and project management as assigned.</li>
<li>Act immediately on all guest complaints to ensure that a correction is made wherever possible.</li>
<li>Work closely with training department to log and track all serves safe requirements and safety and sanitation requirements.</li>
<li>Conduct personal behavior and select, train, coach, counsel, appraise and retain direct reports who consistently perform actions and behaviors that reinforce the Company’s Mission and Values of Communication, Integrity, Fun, Respect, Accountability, Passion and Dedication.</li>
<li>Protect, promote and perpetuate the Company’s brand through policies, procedures, actions and communications.</li>

Qualifications
<ul>
<li>A minimum of five (5) years experience as a high end Sous Chef or restaurant Chef highly preferred.</li>
<li>Two (2) year culinary arts degree. </li>
<li>High volume wok experience. </li>
<li>Must be able to analyze Food and Beverage data.</li>
<li>Proven ability to reduce food costs.</li>
<li>Must have strong administrative skills and computer skills.</li>
<li>Must be able to demonstrate and deliver a high level of service to our guests.</li>
<li>Have strong verbal and written communication skills.</li>
<li>Has ability to lead and develop a cohesive culinary team.</li>
<li>Can interface effectively with FOH staff to produce a positive guest experience.</li>

What You’ll Do
You’ll be part of the team that keeps automation projects moving. At ProAutomated, we don’t install systems, we partner with system integrators and manufacturers to ensure everything works flawlessly when it matters most.

<li>Support data center startups, performing on-site mechanical, electrical, and control checks.</li>
<li>Lead startup, checkout, and acceptance testing for warehouse fulfillment and manufacturing systems in industries like food and beverage.</li>
<li>Partner with automation and controls engineers to test, troubleshoot, and validate their systems on-site.</li>
<li>Provide clear communication and updates to customers and project teams to keep progress smooth and accurate.</li>
<li>Typical travel rotations follow a days on &amp; off schedule: 5 on - 2 off, 10 on – 4 off, or 14 on – 7 off. Every project brings new challenges and new locations.</li>

Job Description
