POSITION SUMMARY: The Pastry Chef accurately and efficiently executes desserts for all a la carte dining, banquet functions and Member events by preparing them to the exact specifications set forth by the Executive Chef and by performing the following duties:
 ESSENTIAL DUTIES &amp; RESPONSIBILITIES

<li>Prepares, plates and garnishes desserts and pastries according to standardized recipes and Club standards. </li>
<li>Adjusts thermostat controls to regulate temperature of ovens. </li>
<li>Assists other chefs with preparation of food for the various Club venues including banquets, special events, parties and main kitchen to ensure systematic, on-time, organized output.</li>

<li>Consistently knows and compiles the Club’s standard portion sizes, cooking methods, quality standards, kitchen rules, policies and procedures.</li>

Education / Experience

<li>Position requires at least 4 years previous pastry/baking experience in a high volume operation. Private club, hotel or resort setting is preferred.</li>

 Responsibilities

<li>Respond with clarity to subcontractors with respect to questions regarding the project documents and their work.&nbsp; Provide documentation and coordinate with Construction Manager as appropriate.</li>
<li>Participate in pre-construction planning, including logistics, means and methods, bid and scope reviews, and project estimates.</li>
<li>Maintain an up-to-date set of contract documents on site.</li>
<li>Ensure that the subcontractors are maintaining record drawings (“red line as builts”) during construction.</li>
<li>Responsible for the organization, establishment, and maintenance of the on-site field office to project a professional image (organized, clean, signage, etc.)</li>
<li>The timely communication with the Construction Manager on matters regarding financial issues, safety, construction progress, labor issues, material problems, quality, code issues, etc.</li>
<li>Interface and work harmoniously with respective Project Managers and other personnel.</li>
